Summer brings some of Colorado's best produce, and our seasonal menu is built around the ingredients we're most excited to eat right now.
At BOXBOX, a fast-casual restaurant on Colfax, we refresh our menu throughout the year to showcase seasonal ingredients, new flavors, and fresh combinations. This summer, we've added seven new salads and updated our curated BOXes to match the season.
Tomatoes Take Center Stage
4X Tomato Salad
Nothing says summer quite like tomatoes.
Our new 4X Tomato Salad layers fresh tomatoes, roasted tomatoes, sun-dried tomatoes, and mozzarella with a bright tomato vinaigrette. It's a celebration of one of summer's best ingredients and quickly became a staff favorite.
Cooling Summer Flavors
When the weather heats up, lighter and brighter flavors start showing up on the menu.
Our new Cantaloupe & Cucumber Ceviche combines melon, cucumber, lime, and chili-lime seasoning for a refreshing salad that's distinctly summer.
The new Emerald Sesame Slaw brings together cabbage, mint, scallions, sesame-miso dressing, peanuts, and crispy shallots for crunch and freshness.
New Protein-Packed Favorites
Summer isn't just about vegetables.
The new Ginger Scallion Chicken features shredded chicken tossed in a savory ginger scallion sauce. This mayo-free salad is perfect on a bed of greens, in a wrap, or one its own.
Our Riviera Tuna Salad combines olive oil-marinated yellowfin tuna, white beans, and caper salsa verde for a Mediterranean-inspired option that's become one of the most distinctive items on the menu. It’s our first ever tuna salad!
