That belief inspired husband-and-wife team Tim and Laurie to create BOXBOX. From Tim’s seasonal, ever-changing menus to Laurie’s thoughtful approach to the experience, everything we do is designed to make fresh, hearty meals easier for Denverites—whether you’re dining solo, feeding the family, or gathering a group.

Our Story

We created BOXBOX to make everyday meals easier, healthier, and more delicious. As parents of young kids, we know how hard it can be to find food that feels fresh, satisfying, and convenient—whether you’re grabbing lunch for yourself, feeding your family, or bringing people together.

BOXBOX is our take on fast-casual: bold, hearty salads and composed meals made with real ingredients and big flavor. Come in for a bento built for one, pick up dinner for the family, or let us help feed a whole group.

Tim has spent his career immersed in food and beverage, from working in kitchens in Telluride to consulting on restaurant development and designing on-mountain dining experiences for Vail Resorts. Laurie brings a background in building and marketing hospitality brands, from shaping standards for major hotel groups to marketing a luxury travel club. We met during grad school at Cornell University and have been building our lives around hospitality, travel, great food, and memorable experiences ever since.

At our core, we simply love feeding people—whether it’s a quick weekday lunch, a family dinner, a backyard concert, a book club, or a community gathering. That love of good food and connection is what inspired BOXBOX: bold salads and hearty meals for one, a few, or a whole crew.
